Halloumi Hash with Black Garlic & Herb Fava Beans

Ingredients:

  • Cold pressed rapeseed oil 
  • 1 large potato washed with skin on, chopped into 2cm cubes
  • 1 pack halloumi, chopped into 2cm cubes
  • A handful of baby plum or cherry tomatoes, halved
  • 4 spring onions chopped (whites and greens)
  • 1 tsp smoked paprika
  • 1 tsp mixed herbs
  • ½ tsp chilli flakes
  • Salt and pepper
  • 2 medium, free-range eggs
  • Black Garlic & Herb Roasted Fava Beans

 Method:

  1. Pre-heat your oven to 180C fan.
  2. Toss the potato in a drizzle of your rapeseed oil. Season well and roast in a roasting dish for 20 mins.
  3. Remove your dish from the oven and move your potatoes about a little in the tray so they don’t stick. Add in your cubed halloumi, halved tomatoes, ¾ of the spring onions, smoked paprika, mixed herbs and season well. Add a further drizzle of oil, if required. Return to the oven for a further 10 mins.
  4. Once the ingredients are cooked through, fry 2 eggs in a pan in some more of the rapeseed oil.
  5. Serve by splitting the potato mix between 2 dishes and topping each with a fried egg.
