Ingredients:

  • 200g pasta (rigatoni or penne works best)
  • 1 small butternut squash, peeled & cubed
  • 2 garlic cloves, left in skin
  • 1 tbsp cold-pressed rapeseed oil
  • 1 tsp dried sage (or a few fresh leaves)
  • 250g spinach A pinch of salt and pepper 
  • 40g Parmesan (or veggie alternative)
  • A pinch of salt and pepper 
  • Garlic and Herb Roasted Fava Beans

Method:

  1. Roast squash cubes and garlic (wrapped in tin foil) in cold-pressed rapeseeed oil, sage, salt & pepper at 200°C for 25 mins until soft.
  2. Squeeze roasted garlic out of skins, blend with squash and a splash of pasta water until smooth.
  3. Cook pasta, drain, then toss with the creamy squash sauce and Parmesan.
  4. Mix in the spinach.
  5. Serve topped with Garlic and Herb Roasted Fava Beans.
