Totally customisable (this is just our preferred variation!)
Ingredients:
- A tbsp cold-pressed rapeseed oil
- 1 large red onion
- 5 medium sweet potatoes
- 400g beef mince
- 400g cottage cheese
- 150g kale
- 2 large avocados
- 300g cherry tomatoes
- 100g seaweed and miso roasted fava beans
- A drizzle of honey
- A pinch of chilli flakes
- A pinch of salt
Method:

Prep the sweet potatoes: Chop into cubes and parboil until just starting to soften.

Crisp them up: Toss in a drizzle of rapeseed oil and a pinch of salt, then air fry until golden and crisp.

Cook the beef: Dice the onion and fry until soft. Add the mince and cook until browned. Drain any excess liquid and remove from the heat.

Blanch the kale: Add to boiling water for around 2 minutes - it should stay bright green and slightly crunchy.

Assemble the bowls: Slice the avocado and layer it up with sweet potato, mince, kale, cherry tomatoes, and cottage cheese.

Finish strong: Drizzle with honey, sprinkle over chilli flakes, and top with roasted fava beans for that perfect crunch.
